Applications are invited from motivated,ambitious graduates in food science, biochemistry, chemistry, biology,agricultural science, or other appropriate disciplines, to undertake a one yearresearch project towards the degree of M.Sc.Agr. on the following topic:
"Improving the quality of meatproducts using edible films and coatings"
This work will involve investigating thepotential of thin films made from edible biopolymers to inhibit lipid oxidationin cooked meats and thus enhance their storage stability. The study willencompass real and model food systems and forms part of a larger researchproject on bio-degradable films which has been ongoing at this department for 7yrs.Thesuccessful applicant will register for an MScAgr degree at University CollegeDublin beginning September 2005.Total value of scholarship is €17,000.
